I have never seen a V-6 swap in an AD truck, but I like the idea very much, and I hope you decide to go through with it. The V-6 will "fit" in the same way that a V-8 does. You will have to deal with the exhaust/steering interference issue, but that's the only major challenge.

Some V-6 engines used a single point front mount below the timing cover. If you can find one of those, it should be the easiest way to mount the front of the engine. For the rear, you will need to fab brackets to adapt the GMC mounts to the Chevy crossmember. The Chevy transmission will bolt to the GMC bellhousing and its input shaft will fit the GMC clutch.

No 6 volt starter is made for the V-6, so you will have to convert the truck to 12 volts if you haven't already done so. The other mods needed are routine engine swap stuff like throttle linkage, wiring and plumbing.
