I replaced all of the wiring and things were great for a while but slowly things went out.

First the headlights got screwy, only one each low bright would work on low beam, all 4 on high beam. Then turn signals started acting up. Lost tail lights and finally dash light stopped working.

Any ideas short of rewiring again?

You might have already checked this, did you check the bulbs to make sure they are not burned out?

Good idea about bulbs. A bad bulb can do some tricky things as James said.
I think I would check the headlight switch and it's associated fuse(s). Check all the fuses.
Try to figure out if it's a central distribution problem or coincidental separate issues.

Central distribution:
1. Headlight switch
2. Turn signal switch
3. Ignition switch
4. Battery/alternator. Including cleaning positive and negative posts and clamps.
5. Power to fuse panel/other main power feeds
6. GROUNDS! Battery post ground to motor. Motor to cab. Cab to frame. Grounds at bulb sockets.

You will definitely have to play with it and see if you can get anything to react. Trace the power with an ice pick tester and install some temporary ground jumpers here and there.
