My 66 has a stock 305 e engine. It had the stromberg on when i bought it, it worked fine at first but started leaking, and was needing rebuilt. Im not afraid to rebuild any carb, but i talked to a couple guys that used to drive those trucks when they were new. Everybody said to take the gmc carb off and put one off of a chevy on it. After joining the forum, i decided to go with the holley 500. Bolted it on and it works great. I agree the holly is a little big for the v-6, but my engine doesn't mind it, runs the same as with the stromberg or better.

Are the teal colored wheels original? They don’t match the delta green paint on the body so I was wondering if somewhere along the way grandpa replaced them. But even the spare matches the other wheels…???

Carb Rebuild kit has arrived and hopefully I’ll get started on it this week. Looking for any tips for cleaning the oil and dirt off the engine. Is it best to just let some degreaser soak for a while and pressure wash it? Or is it a bad idea to use water?

Go ahead and use water, as long as you don't directly spray the alternator, voltage regulator, points ignition, etc. After washing, drive a little to warm up the engine to let the water evaporate.

That old grime and grease is tough stuff, best to let it soak for a while. It is really packed and that makes it difficult to dissolve. Maybe penetrating oil will creep into the grease and soften it up? Worth a try I guess.

To answer your question about the green wheels, yes I believe they are original.
I have a showroom flyer from 1960 showing a green truck with lighter green wheels, and also a light blue truck with blue wheels. Most GMC's from that era had white wheels.
