Go ahead and use water, as long as you don't directly spray the alternator, voltage regulator, points ignition, etc. After washing, drive a little to warm up the engine to let the water evaporate.

That old grime and grease is tough stuff, best to let it soak for a while. It is really packed and that makes it difficult to dissolve. Maybe penetrating oil will creep into the grease and soften it up? Worth a try I guess.
