How much coolant does it take for for a 1966 GMC truck V6 305 engine?

WOW! That's a LOT! GMC always advertized their V-6's circulated a LOT of coolant. Definetly built for heavy-duty use.

My 7.3L PSD also holds 8 gallons of coolant.

That is if you aren't running an oversize radiator and heater core. if you are, add between 1/2 to 1 gal. to what Ed has said.
